We're excited to offer you this beautiful exotic coffee from a truly innovative grower, Don Luis Anibal Calderon. First, the beans were exposed to a dry anaerobic fermentation for 24 hours, then kept inside grain pro bags for 60 hours at temperature below 22 degrees Celsius. After that, the beans were frozen for 72 hours and then allowed to defrost. Finally, coffee beans were de-pulped and placed on raised beds for drying. The results of such experimental processing is impressive and we are really proud to be able to offer you such an extraordinary coffee!
In the cup, you can expect a light/medium body with strong florals that remind us of juniper. Smooth, yet complex craft chocolate and strawberry flavours are balanced by a juicy ripe pineapple acidity.
In espresso, this coffee has very intense flavours, definitely more suitable for the adventure seekers amongst you.
This is amazing coffee, the care and innovative approach shown in producing this lot is really evident in the cup.
