'...this is our second year of working with the Aguilera family and we're thrilled to have found such distinctive, delicious coffee'.
This coffee is exceptional. We have only been able to secure a small amount of this lot - a rare varietal, and we're not expecting it to stick around for long.
When we drink this coffee, we're instantly reminded of Bakewell tart and Battenberg cake. It has an addictive sour cherry acidity and a sweet marzipan thing going on. In the few days after roasting, we found it almost unbearably 'fizzy', but give it a bit more rest (two weeks ideally) and everything settles down and becomes much more balanced. Still, there is so much complexity in this lot and every time we brew we're finding something new.
This is the first of several lots we've secured this year from the Aguilera family. I just know you're going to love it.

We're thrilled to continue working with the Aguilera family. Dylan Aguilera arrived out of nowhere at the roastery a couple of years ago and asked us if we'd be interested in trying some of his family's' coffee. We knew he was the Costa Rican cup tasting champion, so of course we were intrigued.
The samples blew us away and we're now into our second season of buying his coffee.
