Wow, what an amazing lot this is. This is our first ‘Papayo’ and it won’t be our last, that’s for sure.
In the cup, you can expect standout clarity and complexity. Raspberries are the dominant fruit note and they sit alongside a wonderful lime acidity. A rich, brown sugar sweetness rounds things off beautifully and you’re left with the impression of a perfectly balanced coffee.
This is what happens when you take an exceptional varietal and judge the processing perfectly. Yes, it’s an anaerobic fermentation, but you wouldn't know in the cup….and that’s a compliment. This is washed coffee at its very best.
