OUR NEXT ROASTING/SHIPPING DAY IS MONDAY 10TH FEBRUARY.

I’m really excited to let you know that we have recruited a couple of new people to the team. This is more exciting than usual because this time it means that we are finally able to begin training some of our team members to become fully-fledged coffee roasters!
On a personal level, this is really fantastic news. Up until now, I’ve been responsible for ALL the roasting myself. Now don’t get me wrong. I love it. There are few things more satisfying and enjoyable than taking green beans, turning them brown and sending them out to people to brew at home or in their coffee shops, but when it’s all down to me it gets tricky sometimes - like when I’d like to have a holiday that lasts for more than four days for example!
So, it’s going to take a while to get the training done but we’ve invested in new equipment and developed our quality control processes to the extent that I am now confident that we can get other people doing just as good a job as I do.
One change that you will notice is that we are now going to be roasting once each week for webshop orders, every Tuesday. There are a few reasons for this change. Firstly, our roastery is situated in a building that is open to the public between Wednesday and Sunday. Our main roasting days have always therefore been on Mondays and Tuesdays because then we don’t have to serve coffee at the same time as roasting it! Our space is completely reconfigured by us every roasting day as we need to create packing and weighing stations amongst other things.
Our roasting days on a Thursdays started really early so that we could get everything back in shape for opening the coffee shop at 9am. 3am starts are starting to get really challenging for a whole load of reasons and I’ve decided that things need to change if we’re all going to keep our team healthy and happy in the future.
So, now that we are focussed on Tuesdays for our webshop orders, we can work more effectively and in shifts if we need to - and even roast well into the night on particularly busy days if we need to.
I hope you find it easy to adapt to this change. We currently roast more than 85% of our web orders on a Tuesday so I’m hoping that the shift to roasting all our coffee on one day won’t cause too many issues.
